Kitting is assembling multiple separate items into a single package or bundle. Co-packing is repackaging or relabeling a single product into retail-ready packaging. Some providers do both, but the terms describe different services.
Many kitting providers also offer Amazon FBA prep services — labeling, poly-bagging, bundling, and palletizing according to Amazon's requirements. This is a natural extension of kitting services.
